Honey

It is a sweet sticky substance, produced by honey bee from flowers nectar and some other liquids from planet parts. Honey secrete on it some enzymes, which give the honey its nutritional and healing properties. It is stored in honey combs.

 

Composition of Honey:
There are more than 3000 planets that can be a source of honey. According to this, honey properties can differ according to the same number. In general honey composed of:


1- Water: 17 20%
2- Carbohydrates: sugars (fructose, glucose, sucrose, maltose,etc) composed about 75% of honey and it is the main honey contact.
3- Bee pollen: composed about 5%, and it contains the vitamins, amino acids, and proteins of the honey.
4- Minerals: about 0.17% (potassium, sodium, calcium, magnesium).
5- Pigments: carotene, xanthen, flavonoids.
6- Acids: composed of about 0.57% of honey. There are organic acids in honey differ according to the source of honey. It includes formic acid, citric acid, gluconic acid, lactic acid, oxalic acid, tannic acid, tartaric acidetc. Although honey has acidic effect, it is considered a base-food. This is because of the minerals available in honey which makes the honey with a base property.
enzymes: honey contains many enzymes, which has an important biological effects, such as:a: Invertase:the most available enzyme in honey. It is secreted by sub-throat glands of honey bee. The main effect of this enzyme is converting di-saccharides into mono-saccharides: glucose and fructose.
b: Glucose Oxidase:its effect is to convert glucose into hydrogen peroxide, which has an antimicrobial activity.
c: Diastase:its source is pollen, its effect is breaking starches into smaller sugars easier for absorption.
d: Catalase:its source is pollen, its effect is complementary to glucose oxidase enzyme which produces hydrogen peroxide.
e: enzymesare also one way to check the original honey. If the honey is not original, or it is extremely heated these enzymes will be very little in amount.

How to use honey:
It is best to be used by dissolving honey with water (normal water: not hot or cold), and drinking it between meals, one hour before meal or three hours after meal. The daily allowed dose is 60 100 gm.

 

Dont use in:
1- diabetic patient. (take moderate amount).
2- "Sidr honey should not be used by pregnant women in her first four months.
3- children less than one year of age. Except after confirming that the honey is free from clostridium botulinum bacteria, via lab test.

Storage:
1- Protect from sun light and direct light, it destroys a lot of enzymes in honey.
2- dont store in metal bowels, it reacts with honey. Use always glass jars.
3- keep the jar with as little air as possible, to prevent oxidation.
4- keep the jar closed tightly. Honey absorbs water from air easily and that destroys honey.
5- protect honey from heat. It should not exceeds 25 C.
